A food protection manager exam checks whether you know the numbers that keep food out of the temperature danger zone, and whether you know why each number is what it is. Nearly all of it comes down to five areas: cooking temperatures, cooling and holding, cross-contamination, personal hygiene, and cleaning and sanitising.
This paper runs 20 questions in 20 minutes across those five areas. Every question is original, generated from the rules themselves, and every answer names the FDA Food Code section it comes from so you can check it. One point per question, no penalty for guessing, nothing marked until you submit.

Every number you need, in one table
A food protection manager exam is unusual among certification tests in how small its factual core is. Roughly a dozen numbers carry most of the paper, and they interlock rather than sitting as separate facts.
- Cooking: 145°F for 15 seconds — intact cuts, fish, eggs served immediately · 155°F for 17 seconds — anything ground or non-intact · 165°F instantaneously — poultry and anything stuffed
- Cooling: 135°F to 70°F within 2 hours · 135°F to 41°F within 6 hours total
- Holding: hot at 135°F or above · cold at 41°F or below
- Danger zone: 41°F to 135°F — the same two numbers as holding, which is the point of holding
- Reheating for hot holding: 165°F for 15 seconds (house-cooked food; the Food Code lists exceptions)
- Handwashing: at least 20 seconds of cleaning hands and exposed arms
Notice how few independent facts that is. The danger zone is defined by the two holding temperatures. Reheating uses the poultry temperature. The three cooking temperatures, learned by what they protect against
Memorising 145, 155 and 165 as a list is fragile under exam pressure. Learning why each tier exists is not.
145°F — intact cuts, fish, eggs cooked to order. On a whole muscle, bacteria live on the surface. The surface reaches a far higher temperature than the centre during cooking, so the centre only needs 145°F to be safe. This is why a steak can be served medium-rare and ground beef cannot.
155°F — anything ground or non-intact. Grinding takes the surface bacteria and distributes them throughout the meat, so the centre now carries what used to be a surface problem. Mechanically tenderised or injected meat counts as non-intact for the same reason: the needle carried surface bacteria inward.
165°F — poultry and anything stuffed. Poultry carries the highest anticipated pathogen load. Stuffing earns the same temperature for a different reason: it insulates, so the centre of a stuffed item lags far behind the rest and needs the widest safety margin.
Once you can state those three reasons, the numbers are recoverable even if you blank on them, and the exam's favourite trick — a food you have not seen before — becomes answerable by classification rather than recall.
Cooling: two clocks, and the one candidates get wrong
Cooling is the single most commonly failed topic, and the reason is that the rule has two parts that look like one.
Food must drop from 135°F to 70°F within 2 hours. It must also drop from 135°F to 41°F within 6 hours in total. The second number is a total from the same starting point, not a fresh 6 hours after the first stage — so the second leg gets whatever is left of the 6 hours, four if the first leg used its full two.
The first stage is tighter because 135°F down to 70°F is the range where bacteria multiply fastest. A batch that spends three hours getting to 70°F and then races to 41°F has already grown what the rule exists to prevent, even though the total looks fine. Missing either clock means the food is discarded, and reheating does not restart either one.
The practical methods for hitting the first clock are worth knowing because exams ask about them: divide large batches into shallow pans, use an ice paddle or ice-water bath, stir, and leave containers uncovered or loosely covered while cooling so heat can escape. Covering tightly and putting a deep pot straight into the walk-in is the classic violation, and it also warms everything around it.
Cross-contamination: one question answers most of it
Almost every cross-contamination rule follows from a single question: does this food get a kill step after this point?
Raw chicken that will be cooked to 165°F can tolerate a contamination event that ready-to-eat lettuce cannot, because the chicken has a heat step coming and the lettuce does not. That is why ready-to-eat food sits on the top shelf of the cooler, why it may not be touched with bare hands however recently washed, and why the board that cut raw protein cannot go on to cut salad without cleaning and sanitising in between.
The shelf order itself is a derivation, not a list to memorise. Order raw items so the higher the final cooking temperature, the lower the shelf: ready-to-eat on top, then fish and whole cuts at 145°F, then ground meat at 155°F, then poultry at 165°F on the bottom. Anything that drips then lands on food that will be cooked hotter than what was above it. Reconstruct it that way and you will never have to recall the order under pressure.
Exclusion versus restriction, and gloves
Two staff-health distinctions come up reliably, and candidates who have only skimmed them tend to guess the more lenient option.
Exclusion means the person does not work in the establishment at all. It applies to vomiting and diarrhoea, and to diagnosed illness with one of the major foodborne pathogens. For vomiting and diarrhoea, the person stays out until symptom-free for at least 24 hours.
Restriction means the person may work but not with exposed food or clean equipment. It applies to a sore throat with fever, and to an infected cut or burn on the hand that cannot be covered properly.
On gloves, the rule that catches people is that gloves are an addition to handwashing, never a substitute. Hands are washed before gloves go on and again after they come off, and gloves are changed when switching tasks and whenever they tear. (The every-four-hours rule you may have seen belongs to food-contact surfaces and utensils, not to gloves — do not attach it to the wrong object.) Changing gloves without washing underneath looks careful and is a violation — hands sweat inside gloves and contamination transfers during removal.
Cleaning and sanitising are two different operations
Cleaning removes visible soil. Sanitising reduces the bacteria that remain. Doing one does not accomplish the other, and the exam tests whether you know that.
In a three-compartment sink the order is wash, rinse, sanitise, then air dry. The rinse between washing and sanitising is not a formality: detergent residue inactivates most sanitisers, so skipping it means the third sink does nothing. Air drying is part of the process too, because wiping a sanitised surface with a towel recontaminates it. Before any of this, visible soil is scraped off — the wash sink is not where food debris belongs.
Food-contact surfaces in continuous use are cleaned and sanitised at least every four hours, and immediately whenever you switch between raw protein and ready-to-eat food. Chemical sanitiser concentration and contact time both matter: concentration is checked with test strips, contact time is timed; the specific concentration depends on which sanitiser your operation uses, so follow the manufacturer's label and your local code.
Pacing this paper and reading your report
Twenty questions in twenty minutes is generous for factual recall — most questions here are answerable in 20 to 30 seconds once the numbers are solid. Use the surplus on the scenario questions, which take longer because you have to work out which rule applies before you can apply it.
There is no penalty for guessing, so never leave a blank. If a temperature question stalls you, classify the food first: is it intact, ground, or poultry-or-stuffed? That classification alone gets you to the right tier without recalling anything.
The report splits your accuracy five ways. A weak cooking-temperatures tag usually means you learned the numbers as a list rather than by mechanism — re-read the second section above. A weak cooling tag is almost always the two-clock confusion. Weak cross-contamination means you are memorising rules instead of asking the kill-step question. What are the three cooking temperatures I must know?
